The Food Service Manager III assists with the administration of the food service operation and works independently. Major duties include but are not limited to completing daily menus and/or production records; organizing special meals and meal service; maintaining sanitation and safety standards; providing employee training; and completing physical inventories. Is actively involved in food service management planning, be knowledgeable in nutrition therapy, and have prior food service supervisory experience. Must have a valid Texas driver?s license and be cleared to drive a state vehicle.

This position works under the supervision of the Director of Food Service.

Employee actively participates and/or serves in a supporting role to meet the agency?s obligations for disaster response and/or recovery or Continuity of Operations (COOP) activation.


Essential Job Functions:
1. Attends work on a regular basis and may be required to work a specific shift schedule or, at times, even a rotating schedule, extended shift and/or overtime in accordance with agency leave policy and performs other duties as assigned.
2. Assures a safe workplace is maintained and that co-workers/subordinates follow safety rules.
3. Ensure warehouse staff meets established deadlines for tasks and inventory reports.
4. Conducts scheduled environmental inspections and submits reports in a timely manner.
5. Ensures fire drills are completed as required and occur at different shifts (AM/PM).
6. Oversees inventory records for equipment, food, and all supplies.
7. Serves as the Additional Duty Safety Officer (ADSO).
8. Understands special diets and interprets daily menus to assure patients are provided meals correctly.
9. Applies the principles of Hazard Analysis and Critical Control Points (HACCP) and Serv/Safe in the Food Service Department.
10. Performs all other duties as requested by supervisor or administration.
11. Other duties as assigned include but are not limited to actively participating and/or serving in a supporting role to meet the agency?s obligations for disaster response and/or recovery or Continuity of Operations (COOP) activation. Such participation may require an alternate shift pattern assignment and/or location.


Knowledge Skills Abilities:
1. At least six years of experience in food service and food service management.
2. At least three years of experience as supervisor of food service staff, preferably in a licensed, certified, or Joint Commission accredited health care facility, which included diet modifications in textures or diet components (heart healthy, diabetic, low sodium diets, and vegetarian diets).
3. Have the ability to follow and implement established policies and procedures regarding personnel management.
4. Ability to make recommendations regarding areas needing attention.
5. Knowledge of ordering, receiving and issuing dry and frozen groceries.
6. Knowledge of warehouse food inventories.
7. Ability to read and understand Life Safety Code, Food Sanitation, Material Safety and Data Sheets (MSDS), and similar rules and regulations so they may then be translated into necessary plans of work and training for food service staff.
8. Ability to prepare written documents, procedures, reports, and training plans related to functions of the Food Service Department.
9. Ability to develop, negotiate, and document food and contract specifications.
10. Knowledge of wholesale sources of goods and services commonly used in food service.
11. Ability to assist food service staff in performing general food service tasks, as needed.
12. Ability to use the computer to generate email, Word documents, and Excel spreadsheets.
13. Ability to generate management summary reports from existing related software as needed to monitor effectiveness and efficiency of the food service operations.
14. Ability to rotate for coverage of the 24/7 call duty and to respond to various emergencies as needed; often during inclement weather events.
15. Ability to travel upon request with reimbursement approximately 10% of the time.


Registration or Licensure Requirements:
If this position is required to drive, must possess a valid Texas driver license or obtain it no later than 90 days after hire date to drive a state vehicle. Applicants with an out-of-state driver license must provide an original certified driving record from the state of driving licensure. Eligible driving record required based on HHSC Fleet Management policy.

Initial Selection Criteria:
1. At least six years of experience in food service and food service management.
2. At least three years of experience as supervisor of food service staff.
3. Supervisory experience in a licensed, certified, or Joint Commission accredited health care facility is preferred.
4. Knowledge and experience in diet modifications in textures or diet components (heart healthy, diabetic, low sodium diets, and vegetarian diets).
4. Employee must have Certificate of completion for the Managers Serv/Safe Training.

Salary Note: The salary offered will follow HHS starting salary guidelines which are typically made at or near the posted minimum of the salary range.

All of these diseases are vaccine-preventable. As a result, state hospital policy requires employees be vaccinated according to their level of contact with patients. In the event you choose to not be immunized for the influenza virus, you may be required to wear a mask and take other protective measures.
